Mrs Dudley - A Self Proclaimed Soup Lady

Mrs Dudley - A Self Proclaimed Soup Lady

I absolulely LOVE soup. Any flavor you are craving can be easily made into a soup and most of the time can also be done in under 30 minutes. Most soups also freeze very easy which can make those weeknight meals a breeze.

Quick, Easy & Affordable. With the high gas prices these days many of us are eating at home more. This recipe is affordable and makes lots more gas than you can buy at the pump. :-)

This version on the original restaurant soup cuts the carb count by 13 grams and saves a little over 50 calories per serving. Trust me you will NOT even miss the potatoes. This version strictly cuts the carbs, but try my "Light" version for a complete overhaul of healthiness without sacrificing the flavor.

There is nothing like the first bite of a juicy burger straight off the grill. Well now you can enjoy that same straight off the grill flavor, but in a comforting bowl of soup.

Note: This is not my recipe. It is from the Dinner Doctor cookbook (ISBN 0-7611-2680-5), but it is by far....THE BEST...white chili I have ever had. Therefore...it must be shared.

Honestly......I learned to make chicken-n-dumplings from scratch from my grandfather. I don't think anything can really beat them with all the butter, cream, and home-made egg dumplings. BUT....this version is a good attempt and it's also much faster and more healthy. Therefore it makes them a weeknight friendly meal. The kids also love it.

I saw this on Barefoot Contessa (Food Network) and I just had to make it. I lightened it up a tad bit by not using as much pasta, chicken or breadcrumbs.
