This recipe is really easy; it's really more of a process than a recipe. Rice paper wrappers, which are available in the ethnic sections of most larger supermarkets these days, are a great way to wrap your veggies and protein for a quick snack or light lunch.

Easy to make, high fiber, and no grains of any kind. Great for a low-carb diet or just a flax fanatic like myself! Submitted by KRAVMAGAGIRL
This bread is great for people with gluten intolerance. (Check ingredients on packages to ensure they are gluten-free.) This dense bread goes well with jam or, oddly enough, cottege cheese.Submitted by JENC42
When you're craving something crunchy but don't want the added fat, whip up a batch of these chips. You will not need any special equipment for this recipe, just a couple of brown paper bags.
These chewy, super-nutritious and gluten free granola bars are adapted from Vintage Mixer, who adopted it from Alton Brown: http://vintagemixer.blogspot.com/2010/02/dried-fruit-and-nut-granola-bars.htmlSubmitted by JO_JO_BA
Provide quick energy whenever you're running out of steam, or after a hard workout when you need a quick fix for your blood sugar. They are NOT low-cal, they are intended as a snack to tend you over when you don't have time to prepare something. Full of fiber and healthy fats they do the trick.Submitted by BINEMELLES
Packed with 14 g of protein, these flourless brownies make for a good for you snack. Well, ok so they have some brown sugar in them... go ahead and try substituting with your favorite healthy sweetener...can't hurt to try. But for now, here is my original recipe.Submitted by APPLECRUMBLES
Rich, tasty and gluten free quiche
This delicious country style bread is just like the kind Mama used to bake...only its gluten-free! Toast and top with poached eggs for breakie, or pop on the grill and top with 'Home-made lentil burger patties' for a scrumptious meal!Submitted by MRS_MORRIS
A crunchy sunflower seed, pumpkin seed and almond crust provides a hearty base for the rich and creamy pumpkin custard filling. You'll never miss the gluten or the doughy pastry! This is equally delicious frozen - one of my friends prefers it that way!Submitted by JO_JO_BA
Perfect for chocolate lovers! Great for entertaining, deceptively easy to make. Perfect for people who can't have gluten. Serve warm with ice cream or whipped cream, or simply dusted with icing sugar. I flour the pan using cocoa powder so it won't leave white marks on the cake and keeps it totally gluten free. Not low calorie, but very rich so you could easily half the portion if you pair it with some berries on top. I also know someone who substituted splenda for the sugar and swore she couldn't tell the difference but I have never tried it.Submitted by PRINCESSNURSE
