Garrod - Mathia Family Recipes

Being the first in my ancestry to be born in America to German immigrants, this cookbook has recipes I grew up with as a Mathia, as well as traditional recipes of my husband's family and those our children grew up eating. Many originals!

Cookbook creator says: This recipe is not from my personal files, but I'm happy I found it. My mother used to make this soup all the time - I was "raised" on sauerkraut being a first American born German. This is very tasty and tart and a recipe I did not keep in my files. Thanks!

Canned pink Salmon Patties
Very Good 4.3/5

Cookbook creator says: My husbands mother made salmon patties all the time. Instead of using bread crumbs, she would use saltine crackers - a good substitute if you don't have bread crumbs in the house. This was a Garrod family favorite growing up.

A Garrod family staple. It was easy to make with ingredients one might always have on hand. Here is the less fat, less calorie version. I use turkey bacon in this recipe, but you can use regular bacon. Mom Garrod would turn in her grave if she knew I was using turkey bacon.

A great way to get kids to eat their vegetables, especially broccoli which has a stronger taste. Adults will love this as well and it was a standard recipe served to our kids as they were growing up. It is simple and quick and a great side dish for busy working parents.

This recipe makes six loaves so you can stock up and have homemade bread for your family. I made a lot of homemade bread when my kids were growing up, and they helped. It is one of the items they "ask" me to make when I visit. You can freeze this bread and warm in toaster oven, microwave or regular oven. The secret to this recipe is to have EVERYTHING from the bowl to the towel "cozy warm". This packages up great for food gifts or parties.

My husband loves things like crisps, upside down cakes and bars. So I try to make sure they are not only made with love, but also healthfully. I've revised this apple crips recipe to be a healthy alternative with a generous portion size for guiltless enjoyment.

This takes french toast to the next level. A disastrous french toast morning made for my son's friends left me wondering if there was a better way. Needless to say my son never brought his friends for breakfast again. Since then, this french toast casserole is absolutely delicious and loved by all. It is great for days when the kids have off from school and doesn't require any last-minute preparations. Arrange the eggs, milk and flavorings the night before so the flavors have time to soak into the dry bread cubes. Delicious! Wish I would have had this recipe back then!

Replace speghetti with speghetti squash. You won't believe how tasty it is and the healthy substitution will have you making it over and over again as you strive to reach your weight goals! A secret is you might choose to top this dish with feta cheese one time (1/2 cup) and walnuts or sunflower kernels the next. If you've got a few extra calories to work with, add all three for variations on the below dish.
