Delicious chewy muffins with a dense texture, perfect with a cup of tea. No added sugar, egg or oil, but just sweet enough. I call these my quarter cup muffins, as I use that amount of each of the dry ingredients...so easy! (Recorded in grams so the calorie count can be calculated).

These are really good and super good for you too! I can't stand eating a muffin if it's dry and tasteless and these are moist and spicy. They provide plenty of protein and fiber to keep you going. If the spinach and cayenne pepper freak you out replace the spinach with carrots or zucchini and leave out the pepper. I like the surprising little kick at the end of each bite
