Soy milk can be replaced with regular milk and fresh pinnaple can be replaced with frozen (I like Trader Joe's Pineapple Tidbits).
Also, if you have one, it's easier to make in a single serve blender (The Bullet or the Rocket).

Delicious low fat vegan version of this ever popular Greek dish. Delicious served with a crisp green salad and a few black Olives! The tomato sauce makes enough for two dishes, I usually freeze the other half. The Nutritional information is calculated for the whole amount of tomato sauce - not sure what it would be using the amount for this recipe - but it's less.

This is a great low-cal, low-fat party snack.
You can choose different tortilla flavors to vary the taste.

The filling mixture also makes a great dip for chips or veggies.

A food processor is helpful with this recipe, but not necessary.

I was AMAZED at the creamy flavor and taste! Plus, using the ingredients as listed, this dish is filling, healthy, low in calories (210) and fat (6g)! The way the mushrooms, cheese, and garlic blend together is yummy. *I'll put up a photo when I get home from work*
