Cookbook creator says: I will likely drop the tomato slices in favor of mixing in some tomato sauce. Hubby won't eat tomatoes unless it is sauce based. I might mix in some veg too...like bits of brocolii or zucchini and add some spice like Mrs Dash salt free.
