Easy Muffin Mix and Muffins

A super easy mix to put together and store so you can make muffins easily and for very low cost and calories! I make the mix about once a month and then store it in a big #10 can (the size of a large coffee can) with a lid. On top of the lid I put the directions for making the muffins so that even my children can put them together.

A simple and easy coffee cake, its quick to whip up on a weekend morning. Its not fancy, but sometimes that's not what you need!

I often make this for company, mixing the dry ingredients, and the wet in seperate bowls the night before, and mixing the two together in the morning. A nice breakfast without spending all my time slaving away.

I was looking for something to fill the desert crepes I made, and decided on using the apples I had. I made an apple pie filling of sorts. I'd rather that I had something other than granny smith apples, but they worked. The added sugar helped to curb their tartness. Add more or less sugar to taste.

You can make this healthier by using whole wheat flour and leaving out the chocolate chips. They have a very moist, fluffy texture.
