Spicy Chicken Peanut Pasta (Sauce)
Very Good 4.6/5
(25 ratings)

This recipe is from "Clueless in the Kitchen" by Evelyn Raab. This delicious chicken peanut butter sauce was originally meant to be served over pasta, but it's also great over rice or Thai noodles.

I didn't like brown rice and despised lentils. This recipe changed that. I do enjoy a good curry!

Vegetarian, and a 'clean out the fridge day' recipe, which can be varied according to what you have in your crisper. The soup mix can be changed to any kind of pulse at all, again dependent on what you have on hand.

Makes a thick, richly flavoured soup, which takes very little time to prepare.I generally allow five hours of very slow simmering before serving to enable the flavour of the soup to develop fully.
