Vegetarian Vindaloo
Very Good 4.2/5
(54 ratings)

Vindaloo is one of my favorite dishes in the world! This spicy Indian curry can be made vegetarian or with meat and is packed with spices. For those new to Indian cooking, I simplified the spice list, choosing five you might already have on hand.

I read about people taking fish and covering it with salsa and then throwing it in the oven. It sounded really tasty minus the fish, so I thought this simple dish up.

A delicious Indian recipe- subtly spicy, with tons of flavor, and vegetarian to boot. This recipe isn't quite quick, but it doesn't take forever, either, and it's a one-pot meal. If you're watching your sodium, choose canned tomatoes that don't have added salt. Adapted from Orangette's recipe here:

A word of warning- don't skimp on the olive oil. I know it's tempting, but it's a healthy fat and it's absolutely necessary to prevent sticking and to get the correct flavor in the first steps of the recipe.

A simple, warming and hearty soup that's fast to prepare. Sodium appears to be high but that depends on your chosen broth and if you drain and RINSE the beans the sodium will be much lower than reported here.

Spicy Might be an understatement, this makes your lips burn! It helps you get your water intake up though! It is delicious.

General Tso's chicken was always my favorite, until I stopped eating meat. This is just as tasty, and so much better for you.
This is great by itself, or served over rice, quinoa, or steamed broccoli.
The celery is optional; it helps bulk up the meal with few added calories.

Cook pasta according to package directions, drain, reserving 1 cup of cooking liquid
In large skillet heat oil over a medium heat, add the garlic and cook until golden. Add the red pepper flakes and cook an additional 30 seconds. Add the broccoli, season with salt and pepper. Add 1/2 cup of cooking water, cover, and cook for 5 minutes stirring occasionally until broccoli is tender. Add an additional 1/2 cup of cooking water to sauce, add drained pasta, toss to coat evenly, cover & cook one minute longer. Divide pasta between 4 bowls and serve immediately.

Amazing, plain and simple. In this recipe beef is replaced with protein rich, low fat seitan (wheat gluten) and sour cream is replaced with tangy soy yogurt. Vegan, fish-free Worcestershire and a good red wine vinegar add richness of flavor. Serve over whole wheat pasta.
