This is great on its own or inside of a tortilla shell and pressed in a sandwhich press! Throw any extra in a tupperware container and keep it for a couple of days, so handy! Very low in fat and calories too, and because of the rice, its quite filling. This is for the entire recipe, but an individul tortilla stuffed with a spoonful is only about 250 calories, so eat two!
