Cookbook creator says: add lime and jalepeno also and use this on EVERYTHING - grilled meat, quesadillas, salads... add diced garlic to it all and use as a fresh salsa w/chips.

with hardy black beans and light on the cheese ,this southwestern-influenced salad needs nothing on the side except some iced tea. Fresh lime gives it a citrusy counterpunch.
