Avocado & Kidney Bean Salad

This is a yummy salad that is very flexible. Try subbing olive oil/balsamic vinegar as a dressing. Remember avocados are a little bit higher in the mono saturated (healthier) fats but also a great source of fiber! On the 2nd round of this salad, I tried adding dill and some rinsed, canned chicken. That was also good. Enjoy :)

A simple, warming and hearty soup that's fast to prepare. Sodium appears to be high but that depends on your chosen broth and if you drain and RINSE the beans the sodium will be much lower than reported here.

My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values. I do, however, recommend using 100% whole wheat bread as it compliments this recipe wonderfully!

This is a fantastic way to sneak veggies into your kids. I HATE cauliflower and cabbage and I love this soup. Very little prep time, 4 ingredients, and <1 gm of fat.
