The beans serve as the crust and satisfy the meat/pasta craving. A pretty, filling, nutritious dish. You can substitute most kinds of vegetables, as long as they're soft when steamed (zuccini, spinach, etc.)

One of the fastest dinners I've ever made! Nice blending of colors and packs a bang for nutrition. Props to sparkpeople.com recipes, "Spinach with Golden Raisins and Pine Nuts" - this recipe was a result of some of the remaining ingredients from that one.

This is my absolute favorite dish from Ruby Tuesday so I had to find a way to make it over. Its called the smokehouse chicken and it is a favorite by many! This delicious dish is high in fat and calories if ordered from the restaurant so I came up with a healthier, guilt free version that has become a favorite in my household!
