A delicious take on cole slaw without the mayo from a friend of mine. Contains almonds and sunflower seeds. I brought it to a party recently and people were saying how good it was, not realizing I had made it. That's pretty high praise! You can cut this recipe in half, too. My family loves pasta salad for picnics. Since I haven't been eating pasta as part of my diet, I would just make it and do without. Well, for Labor Day, I realized I didn't have pasta and decided to use some quinoa I had in the pantry. This is tasty, nutty and HEALTHY!! Your family will most likely NOT miss their pasta. Add green and red pepper, chopped onion, small diced broccolli and cauliflower, cucumber and any garden fresh veggie to make even better!Submitted by JOEKNEE

This is a yummy salad that is very flexible. Try subbing olive oil/balsamic vinegar as a dressing. Remember avocados are a little bit higher in the mono saturated (healthier) fats but also a great source of fiber! On the 2nd round of this salad, I tried adding dill and some rinsed, canned chicken. That was also good. Enjoy :)

This colorful salad is a slightly changed recipe I got from Epicurious.com. It's great for potlucks or outdoor eating. You can significantly lower the fat and calories by leaving out the nuts and the recipe is still quite good, but the nuts add an extra layer of texture that's really nice.

To save time, I shred the cabbage and slice the apples with my food processor. You can also make the spiced nuts and dressing a day ahead - store the nuts airtight at room temp. Cover and chill the dressing; bring to room temp and rewhisk before using.Submitted by ELLE_EMENOPE
