This is a yummy recipe my mom had forever in an old recipe box (I don't remember who else it came from). Its a good one that you can start preparing the night before, throw it all together in the morning, and finish when you get home from work. Filling and delicious on its own, and low on calories (as long as you watch the amount of extras you put with it!). Prep time is about 30 minutes, cook time is 7-8 hours on low heat.

I was trying to find a good replacement for Chicken veggie soup, and I was so happy with my first batch of homemade seitan that I couldn't refuse making this with it! Use low-sodium vegetable broth/boullion to lower the sodium count in each serving.

Greatly improved soup recipe from the one I had up before--the base used to be campbell's tomato soup, but tasted a bit too ketchup-y on reheat (then again, all that HFCS that's used as filler, I shouldn't have been surprised). This one has a V8 base to it, and is much fresher tasting, likely cheaper, and with less calories. Cooking time indicates crockpot time.

This is what I made for New Years Day 2011--very basic and pretty good (feta cheese optional and not counted in the figures). I used yellow bell pepper, but same basic thing as far as calories goes.
