This recipe was found on another site and I adjusted the ingredients to reduce the fat and cholesterol. It was originally written with vegetable oil and 1/4 cup flour to thicken for a gravy. I added the peppers because we like them and to boost nutritional value. I used olive oil instead of vegetable oil and eliminated the gravy to lighten it. This is a tasty and tender roast and was enjoyed by the entire household.
