Use any veggies that are fresh and in season in this simple summer recipe. Asparagus spears in the marinade and then grilled as a side! Chunks of corn on the cob also grilled as a side. You can also make skewers of just one kind of vegetable, say, mushrooms-since not everyone likes. Then you have extra vegetables. I often grill skewers of just the vegetables with what is left over after putting together the main event. Any kind of summer squash, sweet potatoes, etc. Just group together vegetables that cook at the same times-sweet potatoes and red potatoes and corn take longer than zucchini and mushrooms and cherry tomatoes.

This super-delicious chickpea spread is perfect as a dip for veggies; spread on whole wheat/whole grain toast or bagel and with thin cucumber slices; spread a thin layer on a wrap, add a light sprinkling of feta cheese, then add romaine, thin cucumber strips and three coarsely chopped kalamata olives - roll and enjoy!
