This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably.

This is my favorite meatloaf recipe ever! The Quinoa adds extra protien and vitamins. To me the Raisins are an absolute must!

Once again, this is not a "diet recipe", but -- personally -- I'd rather have smaller portions of good food. The original recipe came from "The Secret Life of Comfort Food," however, I did make some adjustments: I substituted ground turkey for pork, used fresh tomatoes instead of canned, and chose not to cover the whole thing with an entire package of bacon! This recipe also calls for a mushroom gravy, and I hope I can have just a little gravy in lieu of bacon. We'll see!
