A nice, thick, hearty soup that's good to come home to. Pairs well with a salad and a couple of gluten free biscuits. Loaded with good nutrition, low sodium, low calories, very stick-to-the-ribs too. What could be better than that?

Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito."
Whatever it is, it’ll make you forget uninspired diet food. :-)

I was hungry and this is what I had to throw together. It's probably a basic chili recipe, with out the chili spices. I like tumeric. I buy organic when it's on sale because of the salt. I am also GF. Note this makes more than one serving, but the nutritional value is for 1 serving, of 1.5 cups.
