I made this up with the veggies I had left the day before my grocery run... turned out AMAZING! I love the contrast of the mint against the curry... :D If you want a cooler salad, just wilt some fresh spinach instead of heating the frozen, then let it come to room temp before serving.

Instead of sour cream I use strained yogurt, and I also use mashed blackbeans instead of refried beans... makes it taste 'fresher'! :D

THESE ARE SO YUMMY! This was my first experience to make (or eat) a veggie burger, and I can tell you it won't be my last! Even my carnivore (lol) father LOVES these and asks for them a lot. He calls them Krabby-Patties.
