This recipe is extremely flexible. You could easily substitute other vegetables such as eggplant, Portobello mushrooms, golden zucchini to change up the recipe. Very filling and a huge portion!!!!!

This is a delicious recipy I came up with one morning. It can be made in a flash and fills you up, plus it's low calorie, low fat, and low carb. It's very flexible, you can change the cottage cheese to applesauce ratio, or change the toppings.
