Great healthy, filling muffin for breakfast or a snack.
(I substituted nutrient-dense blackstrap molasses for Splenda. That ups the carbs and calories, but it also makes this snack a great way to add calcium, iron and potassium to your diet.)

Flax can absorb MUCH, MUCH liquid so no other changes were necessary to make this work.
