We’ve all heard of the “cabbage soup diet.” Well, this is not it! However, the nutrients and flavors are rich in this recipe and it’s quick to make and low in the calorie department.Submitted by RHONDAJ130
SOME SERVING OPTIONS:
Serve with oatmeal or cooked brown rice.
Pour over baked oatmeal.
Sprinkle the top with unsweetened coconut flakes and or chopped pecans
Add sliced bananas, raisins or chopped nuts

If you have a vita mixer or blender this can be a quick fix, you can also put all ingredients in a crock pot and cook on low for 8 hrs or high 3.5 hrs. 1 ½ cups with a slice of Ezekiel bread, very satisfying. Serve to the family toped with sheared cheese / dollop of sour cream or Greek Yogurt Freezes well

Packing a powerhouse of nutrients, this light & energizing salad will have you bursting with energy. It makes a lot so you can enjoy it all week long for easy, energizing lunches. I wouldn’t recommend skipping the currants and raisins as it adds a much needed sweetness to balance out the vegetables and lemon juice. I loved it drizzled with a touch of maple syrup just before serving. Feel free to use any herbs and spices you wish. I also love it with a sprinkle of cinnamon on top.Submitted by PRINCESSNURSE
