Best ever oven baked recipe for "fried" chicken! I put a pan of vegetables to roast while chicken is baking (carrots, cauliflower, beets) and everything is done at once. Very yummy, quick and easy.

I had an abundance of zucchini in the garden this year. This recipe used one large one (about 1-1/4 lbs) and was a big hit! I would even make this for a light Sunday night supper. My son suggested adding ham next time and slicing tomatoes over the top. It takes some time, but can be prepared ahead. Try it!

Great recipe scaled down that my grandmother makes for large groups. Really only needs one can of cream of mushroom soups and a half a can of milk but we use the extra as gravy for mashed potatoes.

Just to clarify for the questions below:
First, YES the cream cheese is figured into the totals...if you use FULL FAT cream cheese, the fat content will be considerably higher. But low fat cream cheese really takes the fat down.

Second, I haven't ever tried it with regular Italian dressing...let me know how it turns out!

Third, I HIGHLY recommend using the low setting for cooking...it allows the juices from the chicken to really seep into the dressing.
