Polow in Persian, pilaf to us, according to Wikipedia, is a Middle Eastern, and Central and South Asian dish that was first mentioned in the histories of Alexander the Great in describing Sogdian hospitality. (Sogdian was an eastern Persian province that may have been the birthplace of Alexander's wife Roxana, now Uzbekistan.) Uzbek plov is considered to be one of the oldest polow/plov rice dishes. It was served to Alexander upon his capture of the Sogdian capital of Marakanda (now Samarkand).

Persian vegetable stew with beef & beans.
Makes 4-6 servings depending how hungry you are. Serve over steamed basmati rice.

Delicious Persian salad that I always get when I go to restaurants. Cheaper to make it at home and goes with any meal. You might find sumac at any middle eastern store, but if you can't find it leave it out. It just adds an extra tang to the salad.

You can use any combination of chicken pieces including breast if you like. Serve with basmati rice and a side of my recipe for tomatos and peppers.

traditional Iranian dish made for special occasions. It is similar to American potato salad, but with chicken and lots of lemon. Very refreshing. A great summer side dish. Cooking time includes setting time.
