Preheat oven to 350 (I used a toaster oven). Mix honey, sugar, earth balance/butter, peanut butter, H2O, and vanilla in medium bowl until smooth/creamy.

Mix flours (not sifted) and baking soda, blend into above mixture.

Blend in chocolate chips.

Use teaspoons to drop preferred size cookie on sprayed (used canola oil spray from Trader Joe’s) sheet/pan.

Bake for 7-10 minutes.

Cool on parchment paper before tasting this yummy delight.

Yield: depends on cookie size, if bite sized; 6 dozen

Add a LITTLE extra flavor to your veggies by pan frying up some turkey bacon while you steam your veggies until they are ALMOST DONE. Then add them to the pan with bacon and stir. The flavor of the bacon permeates the veggies. This IS tastier with real bacon as the flavor is stronger, but healthier with the turkey bacon.

This is a version of one of my versions of cioppino. Cioppino can be described as a seafood stew or soup and is an Italian dish. There are many different recipes floating around and there is no wrong or right way to do it when you think about it... I just think if you dont add garlic you ruin it ;) -dont forget to laugh! My grandfather was from Italy so there are some italian foods that I can make... This is my version of one that I LOVED growing up. This is a single serving dinner or lunch. It is great when you serve it with toasted whole wheat bread to dip with. It takes just under 20 minutes to make. The calories are low enough that you can add your own little twists for a personal cioppino spin-off of your own!

This is a wonderful recipe collaboration between me and my husband. He was wanting some spaghetti squash and I wanted to make it a little different than we have in the past. Our usual method was to bake it soft and then mix it with garlic, chopped tomatoes, mozzarella and Parmesan cheese and bake longer a baking dish. It is good but I wanted something more. This is what we came up with.

It was such a good dish my four year old ate it, and he has taken to being something of a "picky" eater these days.

This is an adaptation of a leftover lamb curry recipe that I found on the internet some time ago.

Since it is a "leftover lamb" recipe, I'm not sure why the author thought that you'd still have the lamb roasting pan in use, but I left that instruction in as a parenthetical expression.

This is a recipe that can handle a fair amount of improvisation.
