These are a delicious and affordable way to enjoy cheese cake in small amounts. You can top the individual tarts with pie filling of your choice but you will need to add appropriate calories. I adapted this recipe from the original of Paula Deen of the food network.

a yummy low fat cupcake...using only 2 ingredients!

EDIT: this recipe can DEFINITELY be made into a cake as well I always use this method for all my cakes now :) nobody can tell the difference & everybody comments on how moist the cake is!

A twist on the southern candy. All the nutty, brown-sugar flavor of pralines in an easier-to-make, easier-to-store, and easier-to-eat bar. Also, for those who LOVE pecan pralines but find that eating pure sugar is slightly sickening, this is a great alternative. While still not a healthy snack, they are incredibly good and freeze well. Splenda can be substituted for about half of sugar.
Not including edges: 1 1/3" by 2" bar per serving, 36 servings
Including edges, which are crispier and darker in flavor than the rest: 1 1/5" by 2 1/4" bar per serving, 44 servings.

I got this receipe off the back of the Hodgson Mill Wheat Bran Box. My grocery store sells bulk Unprocessed Wheat bran for much cheaper, so check yours out and buy it fresh when you need it. I do the same with whole wheat flour.

Mix batter according to directions and store in refrigerator in an air tight container for 2 - 4 weeks so you can enjoy fresh baked muffins any time. These muffins can be customized to your tastes by adding dried fruit, nuts, seeds or chocolate just before baking.

These are just sweet enough and taste really delicious. Avoid overmixing and your muffins will turn out light and moist.
