I found this recipe on the back of the box of the Old El Paso Soft Taco Bake Kit. I altered the recipe by changing a few ingredients. It called for salsa, kidney beans, and Monterrey Jack cheese. Red, Hot and Blue serves a dish called Idaho Pig, with Pulled Pork for a total of 1022.61 calories per serving and that is without vegetables. Due to my allergies, it is one of the few meals that I can eat out and that is almost a full day's worth of calories for me.
