This recipe can be prepared quickly in the morning by mixing the dry and wet ingredients separately the night before. Combine and pop in the oven as soon as you get up. Leftovers keep well in the refrigerator and can be reheated in the microwave.

These are very yummy. Adjust seasonings to your taste! These are quite filling, you can get about 30-36 out of the recipe, depending on the size. Keep a few out and freeze the rest. Try different dried fruits.

These cupcakes are lighter and more "eggy" than a regular cheesecakes. They are great with a dab of sugar free jam.
Cream Cheese should be at room temperature. I use about 1/4 cup of Davinci Sugar Free Syrup but you can use more or less depending on how sweet you want it. Try different flavors in this recipe - my favorite is Dulce de Leche!

This is just a trial I will update after I try it. FYI...I have little pans...Make twice as much for 9 inch pan. I use small round pyrex to make individual cakes. It only took about 30 minutes to cook it that way.
