I love this greek inspired dip. Serve it with grilled pita bread, even my picky kid loves this!!
Play around with the seasonings, to your taste- the cumin is optional, and gives this a smokey flavor. You can substitute parsely for the oregano if you like. If you like lemon grate a small amount of zest in too.

Zaalouk is a Moroccan eggplant and tomato salad that incorporates a large amount of garlic and fresh herbs. It's best made in the height of Summer when the tomatoes are in their prime, and can be served warm or cold - I prefer it warm and mixed with chickpeas.

These are really fast and yummy. The jalapeno and red pepper make the fritters colorful and add just a little spice. If you don't have a red bell pepper laying around, just leave it out. Serve with salsa or as a breakfast side in place of potatoes. A cast-iron skillet works best for even frying.
