I really wanted taco salad so I decided to try a chicken version. Decent on calories and good on protein. You can add beans to increase protien but will need to re-calculate for fat and calories

This recipe can be altered to make it lower in fat and sodium. I make this quite often and just realized I definitely have been eating more than one serving but it is very tasty! This is also good to cut into individual portions and freeze.

Quick and easy to make when limited on time. Very tasty and filling. I make an extra batch and individually wrap and freeze them. Makes for a quick on the go meal, just pop in the microwave for 2 minutes.
