Original recipe calls for regular breakfast sausage, such as Jimmy Dean. But I found this substitute to taste just as good and much less fat and healthier. A great grab and go breakfast. Make ahead and wrap individually in the refridge, micro for 30 seconds on high and go!!

Absolutely excellent chili using canned black soybeans and a true 30 minute, 1 pot meal. Have your local supermarket order them for you, or buy online from Beans are very high in carbs and are not permitted on most low-glycemic or low-carb diets and the addition of black soybeans gives this a most authentic taste and feel. Serve with shredded cheddar cheese and sour cream.

I'm a firm believer that the more that goes into the chili pot-- the better it is for you! Especially in fall after a day spent in the chill doing yard work. Try serving it with baked tortilla chips, some shredded cheddar sprinkled on top and a dollop of sour cream. Yum. And it freezes like a dream.
