This was adapted from several recipes I found here - with a few minor changes. This was SO easy to make and DELICIOUS. My version is a little spicy. It's surprisingly filling! I like to use the Rotel cilantro and lime variety when I can find it.

This cosmo has just enough sweetness and tartness to take the edge off the dryness of the gin while still remaining potent and with a clean aftertaste. While the gin flavor does get masked with the flavors of the other ingredients, it adds a definite spicyness to the drink. Makes one 6 oz drink

With these pancakes you can make up the dry mix (I ususally double it) and keep it in the fridge and make it up only when needed. (which will be often as good as they are)
