Chicken Tikka Masala (Maya's Makeover)
DELICIOUS, easy, and now only 214 calories per serving!! This is my modification of a Chicken Tikka Masala recipe on this site. It sounded great, but I wanted to use less oil, didn't want to buy garam masala (when I had the ingredients for it on hand already), added a missing ingredient into the calorie count, and reduced the serving size. Still very yummy! Submitted by: YIYEHTOV

Gluten Free Lasagna
This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably.Submitted by: BEATLEBANDAIDE

Baked Tofu Kale Loaf (vegan)
This is a modified version of a recipe in my favorite vegan cookbook (La Dolce Vegan!) I'm not a big fan of the taste of kale by itself, but since it is so nutritious I did some experimenting, and found that it is delicious when minced in a tofu loaf =)

Quick Fried Cauliflower
This is my variation on a recipe in Kevin Mills' cookbook "Faster! I'm Starving!" It only takes about 20 minutes total to prepare and it's super yummy. The cauliflower is tender, but still firm -- not mushy like it gets when you boil or steam it. If you want to change the spice mix, just be sure you use other warm spices.Submitted by: SELKIE1964

This is a whole grain, low calorie version of the Fannie Farmer cookbook muffin. Oatmeal, whole grain four, and Splenda is used instead of pastry flour and sugar.
