Barley and Lentil Soup with Swiss Chard
This is a wonderfully healthy soup! It is a good healthy hearty soup that holds up well for the next day. A nice blend of rich flavors and yet so simple to make.
Suggestions for changes and additions from are: Double the tomatoes. It is also good with a spicy sausage, like turkey Andouille. Add more garlic and celery. Instead of Swiss chard, use collard greens. Add chipotle chili powder and/or a bit of liquid smoke and some cayenne to taste. It's wonderfully deep in flavor. Plus, a touch of sea salt when serving really brings out the flavors. Add a spicy Mexican tomato sauce call Chili el Pato from the Mexican food section of the grocery store for a little zing. Try sautéing the onions in some red pepper flakes for a little more depth of flavor.

Barley Lentil Mushroom Soup
There is nothing more satisfying than a warm hearty and delicious soup when it's cold outside. This soup is versatile (add whatever veggies you have lying around), easy and nutritious. Adding both barley and lentils makes this more nutritionally complete for the veggies out there, but feel free to just use one or the other if you'd prefer. And the servings are large! This is (a) an improvement on Corner Bakery Cafe's Mom's Chicken Noodle Soup; (b) a large pot of vitamin-rich, naturally sweet, nutritious, chicken soup that (c) is very easy to make, (d) freezes well, (e) feeds about a dozen hungry people, and (f) I make throughout the year after having and making many different variations on a theme for many years
Although it can take a little time to get the chicken off the bones, it's SO worth it! Also, if you don't want to use a whole chicken or shredding it just isn't your thing, you can use chicken parts or whole breasts instead, cut off the big chunks, and dice or shred them. They'll take less cooking time, too.

Chili - Ground Turkey Chili Stew + Halloween/Autumn Variation!
This is a recipe that I have been experimenting with and tweaking for years. Always a family favorite and they didn't even notice the difference when I re-invented it using low fat ingredients and turkey instead of beef.
The best thing about this meal is how much fun you can have making it. Since it is more of a "stew" I have added all kinds of different vegetables and sometimes even put left over pot roast in with it. Have fun and be creative!
