Amber's Garbanzo Chickpea Extravaganza
I actually got the basics of this recipe when I went to a tops meeting with my mother in law! Get em crispy enough and they are soo tasty! Like eating chips or popcorn but without most of the guilt because they are so jam packed with protein and only have under 200 calories a serving. Easy Black Bean Veggie Casserole
I threw this together tonight with what I had in my house. You can reduce the sodium by draining and rinsing the beans (not accounted for here), but if you do that, you'll want to add about 1/4 cup of low-sodium vegetable or chicken stock to give it some moisture while it cooks.
