For this recipe I used chicken breasts and canned diced tomatoes with no salt. The sodium in this recipe is high because of the sausage and the olives, plus the 1/2 tsp of salt I added before realizing that I'm trying to cook lower in sodium these days! OOPS! I'm going to try to find some sausage that is lower in sodium AND fat and then I will edit the recipe.

Quick Goat Cheese Crumble Pita Pizza

This single serving quick mini-meal is one of my little creations. Its great if your in a hurry but want something fun and even a little exotic you could say! It can be the main course in a lunch, or even a side for a creative dinner. Its even filling as a snack. I checked around and cheese seems to be considered vegetarian. I used basic ingredients so anyone can get ahold of them. I do suggest that if you have time you can throw in the fresh versions in an amount to your taste preference. Also you can use whatever type of sweetener for the sauce you like, however I use calorie free sweetener. Its a great starter recipe if you want to add your own variations too. (lacto-vegetarian)

Sweet Potato muffins!

Heres a little recipe I worked out, and Sweet Potatoes are full of vitamin A! These sweet potato or yam muffins have less than 100 calories each and less than a half a gram of fat each! They come out to just under 1 gram of sugar each, but i use no sugar in them so these are naturally occuring. By the way no these are not "mini-muffins"! Feel free to use regular muffins tins like I did... They are a great harmless snack or breakfast addition. To get your vitamin A be sure to pair it with a healthy dietary fat (we need fat to absorb the A) - breakfast with 1 ounce of reduced fat cheese and a piece of fruit is great! So low cal you can mix and match often- and made with whole wheat flour- so you are getting your healthy whole grains and their awesome antioxidants! Enjoy!
*Don't be scared of the prep time- its just for boiling sweet potatoes. I forgot to add the temperature before but I included it now: 425 F. (its in the recipe text now too)

What a great dish for one of those nights when your kids have a late soccer game! Brown the meat, layer in the ingredients, set your slow cooker on low and go!

NOTE: If you can't find the Italian five-cheese blend, mozzarella will work just fine.

Chili - Ground Turkey Chili Stew

This is a recipe that I have been experimenting with and tweaking for years. Always a family favorite and they didn't even notice the difference when I re-invented it using low fat ingredients and turkey instead of beef.

The best thing about this meal is how much fun you can have making it. Since it is more of a "stew" I have added all kinds of different vegetables and sometimes even put left over pot roast in with it. Have fun and be creative!

Healthy Jambalaya

This Jambalaya is lower on fat and sodium than most others. Due to an oversight, I had not added the tomatoes to the recipe. This has been corrected. The tomatoes used are petite diced with no added salt. If you use other than this you will need to account for the extra sodium.

Carol's Slow Cooker BBQ Beef (crockpot, barbeque, slowcooker, crock pot)

The meat does not need to be seared in skillet first to make this fall-apart tender, pulled BBQ beef for sandwiches. This recipe has so much flavor no one will notice the Worcestshire sauce & the salt were deleted to reduce sodium (you may also use low-sodium catsup and BBQ to reduce sodium further). Using molasses instead of brown sugar and Worcestshire gives a depth of flavor and authenticity, while reducing sugar & sodium. It is great to take to picnics, buffets, or tailgating. Freezes well.

I LOVE chicken & dumplings so when I found this I added my own spin to it and lowered the fat and calories. This is the best chicken and dumplings I've ever had which is amazing since I'm never satisfied with my cooking! You can have a full cup of this hearty comfort food for only 280 calories and 3.8 grams of fat! The sodium could be reduced if homemade biscuits are used instead of the canned biscuits, but if sodium isn't a problem this is a very fast and easy way to make chicken & dumplings!

i made this from taking ideas from 2 other recipes.
very yummy. i used only 2 chicken breasts when i made it, because i have such a small slow cooker and there was ALOT of sauce, so you can add more chicken with out changing the amount of other ingredients. the nutrient info is for 3 chicken breasts, 5 servings. i served this over whole wheat pasta ( not included in the calculations) there is plenty of this with just 2 chicken breasts. might also go well over rice or egg noodles. you can also use a whole 8 oz of fat free or 1/3 fat cream cheese, i did half and half (as is the nutrition info)

Easy Slow Cooker Chicken Casserole

This recipe uses canned vegetables and is useful for somebody who doesn't have a lot of refrigerator space to keep fresh vegetables. However, for a fresher taste you can always use the fresh veggies! It's pretty filling, and fairly low-calorie for 1 cup portions. Make some corn bread to go along with it and add some green beans on the side and you have a great, low calorie dinner.

Chef Meg lowered the fat and calories in this member-submitted recipe, which contains two servings of cooked vegetables per serving!

Lean chicken and a rainbow of veggies are hiding under a tasty, tangy peanut sauce. This is a great way to get kids to eat their veggies.

For a complete meal, serve with brown rice or rice noodles. Don't forget the chopsticks for the kids! It's a great way to teach hand-eye coordination. Slip a rubber band around the top to help them get started.

If you're watching your sodium, reduce the amount of soy sauce, but keep in mind that it will affect the balance of flavors in the sauce.

We used all-natural peanut butter for a fresh taste and healthy dose of real nuts. Chef Meg served hers over rice noodles (95 calories per half-cup serving), but you could also serve this with brown rice.

I threw this together tonight with what I had in my house. You can reduce the sodium by draining and rinsing the beans (not accounted for here), but if you do that, you'll want to add about 1/4 cup of low-sodium vegetable or chicken stock to give it some moisture while it cooks. These are the best, most delicious, even a vegetarian turned non-vegetarian loved them the first time I ate them in a restaurant on our last cruise to Canada! I had to ask for the recipe and the chef was nice enough to share:) Very easy to prepare - if you use frozen scallops, just soak them in water in the refrigerator to defrost until you get home in the evening.
