CHEAP, FAST & EASY - Egg White Breakfast Sandwich
I need protein in the morning or I'm starving before 10! I like to sleep until the last minute possible, but need breakfast on the go. I was buying those Jimmie Dean Egg White sandwiches, when I thought "I can make these MYSELF, and CHEAPER too!" I cook up a dozen egg whites at a time - the LAZY way--I spray a silicone muffin pan with non-stick spray and place 1 egg white in each muffin cup and bake at 400 until done (about 15 minutes). I let them cool and freeze them in ziplocs. This is a great way to use up your eggs before they get old and saves me time in the morning. By the time I toast my multigrain thin (or you can use a light english muffin) the egg white are heated up in the microwave (about 30 seconds). I slap them on my toasted mutigrain thins with a slice of cheese and head out the door!Submitted by: WISHICOULDFLY

Hearty split pea soup that is so easy to make. This is also one of the cheapest meals you can make, you can eat for practically pennies. This is vegetarian, and vegan, but even meat eaters will like it (my husband would say so). Only 78 calories!! If you are watching your sodium, choose Low Sodium Bouillon cubes. Unchained Recipe Contest - Black Bean Burrito
I love eating at Chipotle and even if I get the burrito without the tortilla all of the extras and the serving sizes of everything packs on a lot of calories. While I love the taste of their rice it is not brown rice, which I prefer to use. I also find it much cheaper to make this at home, rather than buying it. I prefer to make my own salsa rather than buying it in a jar. But of course you can substitute if you prefer. But this one tastes great! It is always a hit at cookouts and with my family. My secret ingredients to the beans are thyme and sage. They add so much flavor. I attended a vegetarian cooking class and the instructor talked about adding those two herbs to everything to give a richer and more satisfying taste. This was the first thing that I tried them in and it is delicious. This recipe is not very difficult to make nor is it time consuming. What will take the most time is the rice, which can be made ahead. I am very much an “add a little of this and that” person, so I did find it hard to pin down measurements!
