Chicken and Vegetable Cous Cous
Yum yum yum, I've just had this for dinner and I enjoyed it so much I thought I'd share the recipe.
I whipped it up in about 20 minutes - chopping the veges as the chicken was cooking.
It only uses 2 dishes so there's not much to clean up, which I like!
My husband who "really doesn't like couscous" ate it all up and even had seconds.
I like it when my veges are of a decent size so you get the flavour of them in the mouthful. I buy small mushrooms and small brussel sprouts so I can just cut them in half and they are the perfect bit size.
You can have it for lunch or dinner or take the chicken out and it makes a great side dish for Steak. It's also very nice heated or cold for lunch the next day.Submitted by: SAVANASPARKLES
