Mock French Toast - South Beach Friendly (Phase One)

Swedish Pancakes
This is a family recipe that my grandmother brought over with her from Sweden. All my children and grandkids love it, it is the "expected" breakfast when they spend the night at Nana's house. I have replaced the 3 eggs with egg beaters. Serve with syrup (not included in the calorie calculations. My husband and I use sugar free syrup. Basic European Pancakes
I'm calling these "European" Pancakes as opposed to the ones i have come to know as American Pancakes, because mine are thin and about 8" in diameter, instead of small, thick and fluffy.
They are known all over Europe, the French call them Crepe, the Dutch Pannenkoeken and the Austrians and Czech Palatschinken.
