Manon's WW crepes (makes approx. 7 big crepes)

With a blender or wire whisk, mix all the ingredients together until the batter is smooth and there is no lumps.

In a nonstick skillet, heat olive oil over medium heat. Use a 1/2 cup measuring cup to scoop the batter from the bowl into the pan.
(you could also add blueberries or chocolate sypup if you would like)
Tilt the pan a bit to distribute the batter to the edges (or close to them) so the crepe is as thin as possible. When little air bubbles start to pop up on the crepe (after about a minute or two, depending on the heat of your stove), flip it over with egg flipper. The crepe should be slightly golden brown. Cook on the other side for another minute or so, then transfer to a plate. Repeat for the remaining crepes.

Can be drizzled with maple syrup or a tablespoon of brown sugar for breakfast.
My favorite is, spread with Peanut Butter with a drizzle of maple syrup.Steamed asparagus, ham and cheese wrapped in the crepe makes for a filling lunch or dinner.Change it up:)

Palacinke - French Crepes (makes 16 small crepes)
Palacinke - French Crepes (makes 16 small crepes)

3 eggs
1 cup milk
1/3 cup club soda or can substitute with plain water
1 cup all-purpose flour
3 tablespoons sugar
1/4 teaspoon salt

Pam spray or cooking oil for frying

Beat the eggs lightly with the milk in a mixing bowl. Add the club soda (or water) and stir. Club soda will make them a little fluffier.
Add the flour, stirring with a whisk, then add the sugar and salt. Stir until the batter is smooth.

Heat a 6 " (or 8") non-stick pan over medium heat with Pam or cooking oil. When the
pan is hot, ladle in enough batter to cover the bottom of the skillet thinly, and tilt the pan from side to side to spread the batter evenly. Cook for 2 to 3 minutes until the crepe is lightly browned on one side and then flip over on other side to brown it as well. Remove from pan using a spatula and stack the crepes on a plate until ready to fill them. Oil the pan (very lightly!) before frying each crepe.

Crepes can be filled anything you wish - use your imagination: nutella, fruit spreads, cheese, etc. and rolled.

Crepes with cottage cheese blueberry-vanilla filling and blueberry sauce

These crepes are extremely easy and fast to make. The filling is nice and light, yet full of flavor. This makes a fantastic breakfast, or even a nice dessert. This recipe only makes about three crepes, as I typically cook for myself only. You may want to increase the amount of filling, depending on your personal taste.Submitted by: KB8588
