Cherry Berry Oatmeal Holiday Cookies

Oatmeal cookies are a great way to increase fiber and add bulk to your diet while enjoying something sweet. These cookies have a little holiday touch with the addition of dried cherries, blueberries and cranberries. The acid in the berries replaces the usual sweetness of raisins and also helps to soften the oat flour. Each cookie offers 1 1/2 grams of fiber and very little saturated fat. If you choose to use unsalted butter instead of the smart balance margarine, you would want to add 1/4 t kosher or sea salt to the recipe.

Swedish Pancakes

This is a family recipe that my grandmother brought over with her from Sweden. All my children and grandkids love it, it is the "expected" breakfast when they spend the night at Nana's house. I have replaced the 3 eggs with egg beaters. Serve with syrup (not included in the calorie calculations. My husband and I use sugar free syrup. They are more like crepes and are also delicious with fresh berries and diet whipped topping.

Baked Sweet Potato

I found this recipe on recipezaar.com, but it was a higher fat and calorie version. The original recipe was posted by Tish and it's Baked Sweet Potato recipe #55678 on 'Zaar. Anyway, I had to make some significant substitutions to make the fat and calorie counts more diet friendly. It worked and this turned out fantastic! We served this with lean country style pork ribs and they were amazingly good. I think this would also pair well with Salmon.
