My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum. Even though I CAN eat gluten, I still very much enjoy this delicious banana bread. It is best hot from the oven!

It is super moist, bursting with flavor, and you would never know it was GLUTEN FREE :)))

Plus, it is very low in saturated fat and high in polyunsaturated and monounsaturated fat. It is fairly low carb for a banana bread and it also has 1 gram of sugar PER slice....and they are generous servings!Submitted by: FITFORLIFE22

One day, I decided I'd add a can of pumpkin to a spice cake mix and see what happened. It was good, so the next time, I added pecans and ground flax seeds. Tonight, I substituted unsweetened applesauce for the oil. I sprinkled brown sugar on the batter in the pan and sprayed butter spray on top of that. I ate a piece warm from the oven with a huge squirt of whipped cream. It was wonderful! (My favorite way to finish this cake is to poke holes in it with a wooden spoon, then heat a can of cream cheese frosting in the microwave and pour it on top--but I'm trying to be healthy, and the whipped cream was not bad!)Submitted by: KARLAKRAFTS

/national-date-nut-bread-day/) who found it at AllRecipes. I've done it both with and without the added sugar - it depends on how sweet your dates taste and how big your sweet tooth is! Let it stand (unwrapped, if possible) at room temperature to decrease the "sticky" factor and soften the nuts a bit. Definitely avoid plastic bags though... they will breed mould like crazy!
