Tender Breaded Chicken Breasts
This is one of my family's all-time favorites. It tastes more like tender veal than chicken. For an even healthier version, omit the butter and use your favorite health-conscious oil.Submitted by: SLIMDUCK

Quinoa Pilaf
You can lighten this recipe up by using non-fat parm but I love it this way and it still is a reasonable calorie count. The quinoa makes this pilaf extra nutritional. One of my family's favorite sides. Could also be a good main meal by adding cubed chicken breast or just leave vegetarian (use vegetable stock instead of chicken). Sometimes I add a different variety of veggies like green beans.Submitted by: CLINARD

Flounder Filet Stuffed with Spinach and Feta
This came from RecipeZaar; the only change I made was in using fresh spinach instead of frozen and I used tomato and basil feta instead of plain. It made it sooooo tasty! Next I'm going to try this stuffing in chicken cutlets. Great served with Lemon Garlic Spinach and a brown rice pilaf with raisins.Submitted by: CELLE98

M'jedra
Pronounced ma-zhe-dra, this is a vegan Middle Eastern bulgur wheat, lentil and onion pilaf that is incredibly yummy! I first had it at a now (unfortunately) defunct Middle Eastern cafe and the full-blooded Syrian owner told me what the ingredients were, so after they closed and I was craving this dish, I threw together the ingredients in amounts I felt were similar to hers and it turned out pretty authentic tasting! You can also use equal amounts of whole-grain brown rice instead of the bulgur, but I prefer the bulgur wheat. Nutritional info listed is using the bulgur.Submitted by: BETHPROVERBS31
