Quinoa Pilaf
You can lighten this recipe up by using non-fat parm but I love it this way and it still is a reasonable calorie count. The quinoa makes this pilaf extra nutritional. One of my family's favorite sides. Could also be a good main meal by adding cubed chicken breast or just leave vegetarian (use vegetable stock instead of chicken). Black Bean and Tomato Quinoa
Perhaps it’s the lime dressing, which infuses the dish with flavor without overwhelming it in goo. It could be the quinoa, which has a distinctive nutty taste far superior to white rice and its lamer brethren. Or, maybe it’s the tomatoes, black beans, and scallions, which reminded one friend of "the insides of a really good burrito."

Breakfast Quinoa with Blueberries
Great high protein alternative to oatmeal. Found this recipe in Martha Stewart magazine. My new favorite breakfast. Takes a while to cook, but you don't have to stand over it. I make four servings without the berries, store three and add the berries to one to eat. Reheat in microwave. The Tabouli recipe is a healthful and delicious Mediterranean food recipe prepared with quinoa, mint, garlic, tomatoes, green onions, olive oil and lemon. An excellent picnic food idea, it tastes great chilled or at room temperature.
