Chicken Tortilla Soup (with Vitamix)
Grill Peppers and Onions in Olive Oil.
Season Chicken with salt, pepper, and a hot spice (I used Adobo and Jalapeno). Pour Broth (Carton) in blender add grilled vegetables. Blend for 7-8 Minutes. While blending, cook chicken in onion, pepper pan--use a weight to expedite cooking (or cook chicken ahead of time). Pour broth blend into soup kettle/pan. Season to taste (to spicy or salty. Shred cooked chicken. Add chicken and corn to broth. Simmer. Serve 1 C topped with 1 oz shredded cheese. Submitted by: BORN2BFIT1
