Apple Cinnamon muffins made from Sparkpeople's multi purpose baking mix
Apple Cinnamon muffins made from Sparkpeople's multi purpose baking mix

Found this recipe from Carole Reu on Food.com, and made some adjustments. It called for Bisquick and I had just made a batch of this Homemade Multi-Purpose Baking mix on Sparkpeople. Its made with half whole wheat and half white flour. My husband never gets excited about anything I bake, But he did try one of these last night and demanded that I put 2 in with his lunch today. Made me feel so good I made another batch.Submitted by: MRS_CIESIOLKA

Quinoa Meatloaf Muffins or Loaf (modified from SparkPeople user DREWJSPH02)
Quinoa Meatloaf Muffins or Loaf (modified from SparkPeople user DREWJSPH02)

compared to original recipe by SparkPeople user DREWJSPH02: I used all ground turkey rather than part turkey, part beef though I don't disagree with the idea the beef would add a nice flavor; I omitted salt, reduced Worcestershire sauce by half; added heavy seasonings (prepare according to personal taste); I also like to add a bit of hot sauce on top when serving, but that often adds more sodium -- the seasonings noted below do help eliminate the need for additional flavoringsSubmitted by: KOZZIEMOTO
