Chicken taco meat
quick and easy, even from frozen, this taco meat can be used for tacos, taco salads, chicken burritos, and much more.
This is a go-to meal starter for me, when I've forgotten to plan for dinner, I will serve this as one of those meals above. I use the chicken breast tenderloins, put them in the pan frozen, cover and turn the eye on really low to let them quick-thaw.
Use the amount of seasoning and water your taco seasoning calls for for one pound of meat, if you like your meat spicier add more seasoning (adjust the water accordingly) or add a second can of rotel or a can of diced green chilis.Submitted by: CKBYMOMMY

Kim's lowfat jalapeno poppers
A tasty variation on the traditional popper. My hubby likes these for superbowl sunday. You can also vary the recipe by adding 2 -4 T fat free sharp cheddar shreds to the cream cheese mixture. Kris's 25-Minute Tangy Turkey Chili
This is a spin-off of the chili my mom makes! I turned it healthy by subbing turkey for beef and tried to reduce the sodium a bit. Took this to a TOPS holiday potluck and it was a hit!

Cheese Crisps
These are an oven-baked version of the Italian frico. It's just basically thin rounds of baked cheese. One of the cool things about it is that they are moldable when still warm. If you drape them over an upturned glass, they will form a cup that you can fill with anything you like. It makes a really nice presentation for a party.
