WW Sweet and Sour Pork

Heat skillet and add 1 T of olive oil. Add Pork and cook until golden brown, about 8 to 10 minutes, remove from skillet and set aside. Drain any remaining fat from skillet

Drain 15 oz can of Pineapple chunks, reserving juice, set aside.

Combine water, 1/3 cup rice wine vinegar, sugar, 2 Tablespoons of cornstarch, salt, soy sauce and reserved pineapple juice in a small bowl; add to skillet and cook until sauce is slightly thickened, about 2 minutes. Add pork; cook covered over low heat until meat is tender, stirring occasionally, about 30 minutes.

Add peppers, sliced onion and pineapple chunks; cook 5 minutes. Serve over rice. Yields about 1 cup of pork and 1/2 cup of rice per serving.Submitted by: DSSTEIGERS

WW Parmesan Chicken

4 (8 oz) chicken breast halves, sliced in half

¼ cup seasoned breadcrumbs

½ cup Fiber One cereal, ground into fine, breadcrumb-like consistency

¼ cup grated Parmesan cheese

2 tbsp low calorie butter, melted (I like Brummel & Brown Spread)

¾ cup reduced fat mozzarella cheese

1 cup marinara

Non-fat cooking spray

Preheat oven to 450°. Spray a large baking sheet lightly with spray.

Combine breadcrumbs, Fiber One, and parmesan cheese in a bowl. Melt the butter in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb mixture. Place on baking sheet and repeat with the remaining chicken. Lightly spray a little more cooking oil on top and bake in the oven for 20 minutes. Turn chicken over, bake another 5 minutes. Remove from oven, spoon sauce over chicken and top with shredded cheese. Bake 5 more minutes or until cheese is melted. Enjoy!

Mickelle’s note: I think the butter could easily be subbed out for eggwhites, which may further lower the point total. This dish is great served with marinara sauce on spaghetti with a side of vegetables.
