A healthier version of my mother's chili, making some healthier substitutes.
Replaced pork sausage with chicken sausage, and replaced 2 lb ground beef with ground turkey, and 2 lb ground beef with 2 lb white beans.
My mom's recipe for a mild (not spicy), but full-of-flavour chunky chili!
Sautéed apples and onions, a great side to pork tenderloin! I like to cook as directed, but then I add in a dash of whatever spice I am cooking my pork with to tie it in.

Red beans and rice are a staple of the Creole kitchen that can be served either as a side dish or a main course. This version uses a Porter pork stock to cook the beans, and it's served over a slightly bitter IPA rice. To make this an entrée, add a Smoked Quail on top.
This is a slightly spicy, very tasty sauce for dipping fries or onion rings in, and chicken. I created this beast while trying to mimic the delicious sauces that El Pollo Rico (Arlington, VA) has.
